  • 1 c. self-rising cornbread
  • 1/4 tsp. cayenne pepper
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. (2 oz.) shredded Cheddar cheese
  • 1/2 c. skim milk
  • 2 eggs, beaten
  • 1 (8 1/2 oz.) can cream-style corn

    Heat oven to 450°.

    Grease an 8-inch square casserole. Combine cornmeal and cayenne pepper in a large bowl. Add onion, green pepper, cheese, milk, eggs and corn.

    Mix well. Spoon batter into casserole. Bake at 450° for 25 minutes or until golden. Cut into 2-inch squares.
