  • 3 ripe avocados
  • 1 bunch green onions, chopped
  • salt and pepper to taste
  • 1 c. low-fat yogurt
  • 1/2 c. mayonnaise
  • 2 (1 1/4 oz.) pkg. taco seasoning mix
  • 1 1/2 c. shredded Monterey Jack cheese
  • 2 Tbsp. lemon juice
  • 2 tomatoes, chopped
  • 1 (3 1/2 oz.) can pitted ripe olives, drained and coarsely chopped
  • 1 c. shredded Cheddar cheese
  • 1 can refried beans
  • 1 small can chopped green chilies

    Peel, pit and mash avocados in food processor.

    Add lemon juice and seasonings to taste.

    Combine yogurt, mayonnaise and 1 package taco seasoning mix.
