Tex-Mex Easy Dinner

Ingredients

  • 1 lb. ground meat (beef or turkey)
  • 1 can diced tomatoes (15 oz.)
  • 1 can tomato paste (5 oz.)
  • 2 c. water
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 c. diced bell pepper
  • 1/2 c. diced onion
  • 1 can Ranch Style beans, drained (16 oz.)
  • 1 can whole kernel corn, drained (16 oz.)
  • 2 c. cooked rice

Directions

    Brown ground meat, onion and bell pepper in skillet.

    Drain and add diced tomatoes, tomato paste, salt and pepper, beans and corn.

    Add water.

    Simmer over low heat for approximately 30 minutes.

    Cook rice as directed.

    Serve meat mix over hot rice. Top with picante sauce and jalapenos.

    Some even like grated cheese on top.
