- 1 1/2 c. regular long grain rice
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 2 Tbsp. vegetable oil
- 2 3/4 c. chicken broth, heated
- 1/3 c. picante sauce
- 1 small carrot, peeled and finely chopped
Directions

1In large saucepan over low heat, cook rice, onion and garlic in oil until the rice is lightly browned, stirring frequently. Stir in hot chicken broth, picante sauce and carrot.

2Cover and simmer until all liquid is absorbed, about 20 minutes.
