  • 30 ounces black eyed peas
  • 1/2 cup green onions diced
  • 2 jalapeno peppers fresh, seeded and diced
  • 1 bottle Wish-Bone Italian Dressing
  • 4 celery ribs, diced
  • 1 jar pimentos

Directions

    Drain and rinse peas. Place in bowl and add celery, green onions and jalapenos.

    Drain the pimentos and add to peas.

    Pour the Italian dressing over the ingredients.

    Cover and refrigerate for several hours (overnight, if possible).

    If jalapenos are not available, use fresh green peppers and add 1 teaspoon crushed red pepper.
