Texas Cornbread Dressing

  • 10 (2-inch) cornbread muffins, crumbled
  • 5 c. chicken or turkey broth
  • 2 medium onions, chopped
  • 2 eggs, beaten
  • 3 Tbsp. butter or margarine
  • 6 slices white bread, crumbled
  • 4 stalks celery, chopped
  • 1/2 lb. mild bulk pork sausage
  • salt and pepper to taste

Directions

    Soak cornbread and white bread in broth in a large bowl about 10 minutes.

    Stir until liquid is absorbed.

    Saute onions and celery in butter until tender.

    Add sausage and cook over low heat until sausage is browned.

    Drain.

    Add mixture to bread mixture. Add eggs, salt and pepper; mix well.

    Bake in greased 13 x 9 x 2-inch dish in a 350° oven for 45 minutes until lightly browned. Yields 8 to 10 servings.
