Texas Cornbread Dressing

- 10 (2-inch) cornbread muffins, crumbled
- 5 c. chicken or turkey broth
- 2 medium onions, chopped
- 2 eggs, beaten
- 3 Tbsp. butter or margarine
- 6 slices white bread, crumbled
- 4 stalks celery, chopped
- 1/2 lb. mild bulk pork sausage
- salt and pepper to taste
Directions

1Soak cornbread and white bread in broth in a large bowl about 10 minutes.

2Stir until liquid is absorbed.

3Saute onions and celery in butter until tender.

4Add sausage and cook over low heat until sausage is browned.

5Drain.

6Add mixture to bread mixture. Add eggs, salt and pepper; mix well.

7Bake in greased 13 x 9 x 2-inch dish in a 350° oven for 45 minutes until lightly browned. Yields 8 to 10 servings.
