- 1 lb. ground beef
- 3 large onions (about 3 1/2-inches diameter, sliced)
- 1 large green pepper, chopped
- 1 (1 lb.) can tomatoes
- 1/2 c. regular rice, uncooked
- 1 to 2 tsp. chili powder
- 2 tsp. salt
- 1/8 tsp. pepper
Directions

1Heat oven to 350°.

2In large skillet, cook and stir ground beef until light brown; drain off fat.

3Add onions and green pepper; cook and stir until onion is tender.

4Stir in tomatoes, rice, chili powder, salt and pepper; heat thoroughly.

5Pour into ungreased 2-quart casserole.

6Cover; bake 1 hour.

7Yields 4 to 6 servings.
