- 1 lb. lean ground beef, uncooked
- 1 c. chopped onions
- 1 c. green or red peppers
- 1 clove garlic
- 1 (16 oz.) can tomatoes
- 1 c. Minute rice, uncooked (1 1/2 c. rice, if large beans)
- 1 Tbsp. chili powder
- 1 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (16 oz.) can hot chili beans (or 30 oz. if 1 1/2 c. rice)
Directions

1Combine meat, onions, peppers and garlic.

2Microwave on High 5 minutes. Stir several times. Add tomatoes, rice and seasonings. Cook on High 12 to 15 minutes.

3If more liquid is desired, add 1/2 cup tomato juice.

4Let stand 10 minutes.
