Ingredients

  • 1 lb. lean ground beef, uncooked
  • 1 c. chopped onions
  • 1 c. green or red peppers
  • 1 clove garlic
  • 1 (16 oz.) can tomatoes
  • 1 c. Minute rice, uncooked (1 1/2 c. rice, if large beans)
  • 1 Tbsp. chili powder
  • 1 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (16 oz.) can hot chili beans (or 30 oz. if 1 1/2 c. rice)

Directions

    Combine meat, onions, peppers and garlic.

    Microwave on High 5 minutes. Stir several times. Add tomatoes, rice and seasonings. Cook on High 12 to 15 minutes.

    If more liquid is desired, add 1/2 cup tomato juice.

    Let stand 10 minutes.
