  • 1 c. finely chopped onion
  • 1 red pepper, diced
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1/4 tsp. ground red pepper
  • 1 tsp. minced garlic
  • 1 1/2 lb. ground beef, turkey breast or chicken
  • 2 c. fresh bread crumbs
  • 1 c. canned or frozen, thawed corn kernels
  • 1/3 c. plus 2 Tbsp. ketchup
  • 1/3 c. low-fat milk
  • 1 large egg plus 1 large egg white
  • 1 tsp. salt
  • 1/2 tsp. pepper

    Preheat oven to 350°.

    Heat oil in medium nonstick skillet over medium heat.

    Add onions and red peppers.

    Cook, stirring occasionally, until tender, 5 to 10 minutes.

    Stir in chili powder, cumin, ground red pepper and garlic.

    Cook 20 seconds more. Transfer to large bowl and cool.
