Texas Pecan Cake

- 1 lb. butter or margarine
- 2 c. sugar
- 6 eggs, beaten
- 1 Tbsp. lemon extract
- 4 c. sifted all-purpose flour
- 1 1/2 tsp. baking powder
- 4 c. pecan halves
- 2 c. white raisins
Directions

1Heat oven to 300° (low).

2Grease and flour a 9 3/4-inch tube pan.

3Blend butter and sugar in a large bowl; beat until mixture is light and fluffy.

4Gradually add eggs and lemon extract.

5Beat until well blended.

6Sift flour and baking powder together 3 times.

7Add nuts and raisins to flour.

8Gradually add flour mixture to creamed mixture; blend thoroughly.

9Pour into prepared pan.

10Bake 1 1/2 to 2 hours.

11Cool 15 minutes.

12Remove from pan. Serve when completely cool.
