- 4 Tbsp. butter
- 1 large onion, chopped
- 1 small green pepper, chopped
- 1 clove garlic, minced
- 2 to 3 lb. squash, sliced
- 4 fresh tomatoes, peeled and chopped
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. grated Parmesan cheese
Directions

1In a large skillet, saute onion, green pepper and garlic. Stir in squash, tomatoes and seasoning.

2Cook over low heat, stirring occasionally, until squash is tender.

3Sprinkle cheese over top and serve.
