  • 2 lb. ground beef
  • 2/3 c. chopped celery
  • 1 c. chopped onion
  • 3 Tbsp. margarine
  • 2 (6 oz.) cans tomato paste
  • 1/2 c. catsup
  • 2 c. water
  • 2 tsp. Worcestershire sauce
  • Tabasco sauce to taste
  • 2 tsp. chili powder
  • 1/2 tsp. thyme
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 (6 oz.) pkg. corn chips
  • 2 c. shredded Longhorn cheese

Directions

    Brown ground beef with celery and onion in margarine in a large skillet, stirring until ground beef is crumbly.

    Drain. Add tomato paste, catsup, water, Worcestershire sauce, Tabasco sauce, chili powder, thyme, salt and pepper.

    Mix well. Simmer, uncovered, for 1 hour. Serve over corn chips and top with cheese. Yields 6 servings.
