- 1 Tbsp. oil
- 2 Tbsp. red curry paste
- 1 lb. (450 g) boneless skinless chicken thighs, cut into bite-size pieces
- 1 large onion, cut lengthwise in half, then crosswise into thin slices King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 1/2 lb. (225 g) fresh green beans, trimmed, cut diagonally in half
- 1 can (400 mL) lite coconut milk
- 1 cup grape tomatoes, halved
- 3 Tbsp. Kraft Smooth Peanut Butter
Directions

1Heat oil in large saucepan on medium heat.

2Stir in curry paste.

3Add chicken, onions and garlic; cook and stir 6 to 8 min.

4or until chicken is done.

5Stir in beans and coconut milk.

6Bring to boil; cover.

7Simmer on medium-low heat 10 to 12 min.

8or until beans are crisp-tender.

9Add tomatoes and peanut butter; cook and stir 3 to 5 min.

10or until peanut butter is completely melted and mixture is well blended.
