Ingredients

  • 1 chicken
  • 3 clove garlic
  • 1 tbsp fresh ginger
  • 1 pinch cayenne
  • 3 dash chili powder
  • 1 dash fish sauce **
  • 3 dash sage
  • 1 dash teriyaki sauce**
  • 1 dash soy sauce**
  • 1/2 tsp Seseme oil
  • 1 dash curry powder
  • 1/2 can coconut milk
  • 1 tsp chili paste
  • 1 tbsp teriyaki sauce*
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp fresh ginger
  • 1/2 cup peanut butter
  • 1 lemon or lime (juice)

Directions

    Preheat oven to appropriate temp for chicken, I roasted a whole chicken at 350 for 1 1/2 hours.

    Chop garlic and grate ginger

    If roasting a whole chicken, cut 2 stalks celery, 2 or 3 large carrots, 1 onion and 1 pepper ( I used sweet) for underneath the chicken.

    Add all dressing ingredients over your chicken, I like to put the ginger and garlic underneath the skin of the breast.

    Place in oven and set timer

    Place all ingredients for sauce in a saucepan.

    * teriyaki since can be replaced with 1 tbsp soy sauce

    Heat until peanut butter is mixed in, no need to cook it much, just make it hot

    Too serve pour sauce over chicken and ( if you wish) veggies
