Thai Quinoa Salad

Ingredients

  • 2 c quinoa
  • 4 c veggie broth
  • 1 1/2 c shredded red cabbage
  • 1 c julienned carrots
  • 1/2 c cilantro chopped
  • 4-5 basil leaves minced
  • 1/2 c green onion sliced on diagonal
  • 1/2 c unsalted peanuts chopped
  • 4-6 lime wedges
  • Dressing:
  • Juice of 2 limes ( 4 tbsp)
  • 1/4 cleanup butter
  • 3 tbsp tamari
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp evoo
  • Water to thin

Directions

    Bring quinoa and broth to boil, cover & simmer 15 min.

    Remove from heat and fluff with fork.

    Put cooled quinoa in large bowl. Add rest of ingredients and toss with dressing. Garnish with lime wedges
