- 2 c quinoa
- 4 c veggie broth
- 1 1/2 c shredded red cabbage
- 1 c julienned carrots
- 1/2 c cilantro chopped
- 4-5 basil leaves minced
- 1/2 c green onion sliced on diagonal
- 1/2 c unsalted peanuts chopped
- 4-6 lime wedges
- Dressing:
- Juice of 2 limes ( 4 tbsp)
- 1/4 cleanup butter
- 3 tbsp tamari
- 2 tbsp honey
- 1 tsp sesame oil
- 1 tsp evoo
- Water to thin
Directions

1Bring quinoa and broth to boil, cover & simmer 15 min.

2Remove from heat and fluff with fork.

3Put cooled quinoa in large bowl. Add rest of ingredients and toss with dressing. Garnish with lime wedges
