- 1 tablespoon olive oil
- 2 cups onions, chopped
- 1 tablespoon lemongrass, peeled and finely chopped
- 1 teaspoon fresh ginger, peeled and finely chopped
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1 cup brown basmati rice
- 2 3/4 cups low sodium chicken broth
- 1 teaspoon lime rind, grated
- 1/4 teaspoon salt
- 1/4 cup fresh cilantro, chopped
- 6 lime wedges
Directions

1Heat oil in large nonstick skillet over med high.

2Add onion and next 4 ingredients; saute 3 min or til onion is tender.

3Add rice; saute 1 minute.

4Stir in broth, rind and salt; bring to a boil.

5Cover, reduce heat and simmer 45 min or til rice is tender.

6Remove from heat and let stand 10 minute.

7Stir in cilantro.

8Serve with lime wedges.
