Ingredients

  • 2 teaspoons oil
  • 1 large onion, sliced into rings
  • 1 clove garlic, crushed
  • 2 teaspoons ground cumin
  • 1 teaspoon chilli powder
  • 1 teaspoon grated lemon rind Safeway 4 ct For $5.00 thru 02/09
  • 500g beef rump steak, sliced finely
  • 1/2 cup coconut milk
  • 2 tablespoons KRAFT Crunchy Peanut Butter
  • 1 tablespoon VEGEMITE
  • 2 spring onions, cut into 3cm lengths
  • 1/4 cup fresh coriander, chopped

Directions

    Heat oil in a wok or frying pan over a high heat and cook onion and garlic until softened.

    Add cumin, chilli and rind and cook for a further minute.

    Add beef and stir fry until browned.

    Stir in coconut milk, peanut butter, Vegemite* and spring onions and cook for a further 2-3 minutes until well combined.

    Stir in coriander and serve immediately with steamed rice.
