  • 1 lb fresh or frozen green beans
  • 1/2 large onion, diced
  • 1 clove garlic, minced
  • 2 eggs
  • butter, oleo or oil spray for sauteing
  • 1 cup fresh diced or canned tomatoes
  • 1 cup shredded sharp cheddar cheese
  • salt, pepper to taste

    1.Parboil green beans, set aside

    2.Saute onion & garlic in butter, oleo or oil spray until onion is transparant

    3.Add eggs and scramble lightly

    4.Add tomatoes, heat lightly

    5.Add green beans & sharp cheddar cheese

    6.Transfer to baking dish

    7.Bake @ 350 until bubbly (about 30 minutes
