  • 1/2 cups Mayonnaise
  • 3 Tablespoons Balsamic Vinegar
  • Salt And Black Pepper To Taste
  • 2 whole Chicken Breasts
  • 4 slices Focaccia Bread
  • 4 slices Sun Dried Tomatoes
  • 1 whole Avocado, Sliced
  • 4 slices Mozzarella Cheese

    Combine mayonnaise, vinegar, and black pepper in a small dish.

    Set aside.

    Season chicken with salt and pepper and cook however you desire.

    I used my grill pan to cook mine.

    Let chicken rest and then slice into thin slices.

    On your choice of bread, spread prepared mayo on both sides.

    Layer sun dried tomatoes, avocado, chicken, and finally the mozzarella.

    On a panini press or heated pan, heat sandwich until cheese is melted.

    You can also create a dome using a bowl or pot to help melt the cheese.
