  • 1 cup Milk
  • 1/3 cups Evaporated Milk Or Half And Half
  • 1 cup Yellow Corn Meal
  • 3 Tablespoons Vegetable Oil
  • 1 whole Large Egg White
  • 1 cup Flour (gluten Free Is Fine)
  • 3 Tablespoons Sugar
  • 3-1/4 teaspoons Baking Powder
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Baking Soda

    Whisk together the milks, corn meal, oil and egg white. In another bowl mix the flour (Bob's Red Mill all purpose flour works best for gluten free purposes), sugar, baking powder, salt and baking soda. Then add the dry ingredients into the wet ingredients. Do not over mix. Pour into an oiled 9 x 9 pan and bake 20 - 25 minutes at 400 degrees (F).
