The Supreme Roast Garlic Chicken

- 1 whole Young Chicken
- 1 teaspoon Thyme
- Salt And Pepper, to taste
- 12 cloves Garlic, Divided
- 1 cup Red Wine
- 1- 1/2 cup Low Sodium Chicken Broth
Directions

1Preheat oven to 325 degrees.

2Rinse chicken and pat dry.

3Season chicken with thyme, salt and pepper.

4Put half the garlic cloves in the chicken.

5Put chicken on a rack in a roasting pan and pour the wine, broth and remaining half of garlic cloves in the bottom of the pan.

6Occasionally dump out the juices in the chicken, being careful not to pour out the cloves.

7Bake, basting every half hour for 2 hours or until juices run clear when pierced with a fork in the thigh/leg joint.
