  • 2 tablespoons vegetable shortening
  • 5 cups onions minced
  • 2 tablespoons garlic minced
  • 2 pounds ground beef, extra lean ground
  • 2 pounds ground pork lean
  • 70 ounces tomatoes, canned
  • 24 ounces tomato paste
  • 1 teaspoon oregano dried
  • 1 teaspoon cumin ground
  • 1 each bay leaves
  • 3 cups pinto beans cooked
  • 2 cups cheddar cheese grated
  • 4 cups scallions, spring or green onions sliced

Directions

    Heat lard in a skillet, over a medium flame add the onions and garlic.

    Heat and stir for 4 to 5 minutes, until softened, without browning add the beef and pork.

    Heat and stir until all redness disappears add the tomatoes, tomato paste, oregano, cumin, bay leaf, and beans.

    Bring to a boil, reduce heat, cover and simmer for 2 hours.
