Three Bean Salad

  • 2 cups baked beans, canned
  • 2 cups lima beans
  • 2 cups green beans, canned
  • 1 each sweet bell peppers
  • 1 each onions
  • 250 grams bacon
  • 250 grams mushrooms, button
  • 50 millilitres olive oil, extra-virgin
  • 1 tablespoon honey
  • 1 tablespoon dijon mustard
  • 1 each lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup parsley flakes

Directions

    Chop the onion, slice the peppers and place with the 3 beans in a salad bowl.

    Thinly slice the mushrooms, chop the bacon into small bits and fry until crunchy.

    Add to the beans.

    Whisk the olive oil, honey, mustard, juice of the lemon, salt and pepper until a thick sauce and pour over the bean mix.

    Add the parsley, mix well and refrigerate for 1 hour.
