Three Cheese Enchiladas

- 1 1/2 c. shredded Monterey Jack cheese
- 1 1/2 c. shredded Cheddar cheese
- 1 (3 oz.) pkg. cream cheese, softened
- 1 c. Pace picante sauce
- 1 medium red bell pepper, diced
- 1/2 c. sliced green onion
- 8 (7 to 8-inch) flour tortillas
- 1 tsp. cumin
- shredded lettuce
- chopped tomato
Directions

1Combine 1 cup Monterey Jack cheese, 1 cup Cheddar cheese, 1/4 cup picante sauce, red pepper, onions, and cumin and mix well. Spoon 1/4 cup cheese mixture down center of each tortilla.

2Roll and place seam down in a 9 x 13-inch baking dish. Spoon remaining picante sauce evenly over enchiladas; cover with remaining cheese. Bake at 350° for about 20 minutes or until hot.

3Top with lettuce and tomato and serve with additional picante sauce.
