Three Cheese Enchiladas

  • 1 1/2 c. shredded Monterey Jack cheese
  • 1 1/2 c. shredded Cheddar cheese
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1 c. Pace picante sauce
  • 1 medium red bell pepper, diced
  • 1/2 c. sliced green onion
  • 8 (7 to 8-inch) flour tortillas
  • 1 tsp. cumin
  • shredded lettuce
  • chopped tomato

Directions

    Combine 1 cup Monterey Jack cheese, 1 cup Cheddar cheese, 1/4 cup picante sauce, red pepper, onions, and cumin and mix well. Spoon 1/4 cup cheese mixture down center of each tortilla.

    Roll and place seam down in a 9 x 13-inch baking dish. Spoon remaining picante sauce evenly over enchiladas; cover with remaining cheese. Bake at 350° for about 20 minutes or until hot.

    Top with lettuce and tomato and serve with additional picante sauce.
