  • 1 1/2 c. Monterey Jack cheese
  • 1 1/2 c. Cheddar cheese
  • 1 (3 oz.) pkg. cream cheese
  • 1 c. salsa sauce, divided
  • green and yellow peppers, chopped
  • 1/2 c. green sliced onions
  • 1 tsp. cumin
  • 8 flour tortilla shells (7 to 8-inch)
  • chopped lettuce, tomato and green onions for topping

    Combine 1/2 of the Monterey Jack with all of the Cheddar and cream cheese.

    Add 1/4 cup of sauce.

    Add onions and cumin.

    Mix well.

    Spoon 1/4 cup on a shell and roll.

    Place seam side down in 9 x 13-inch dish.

    Top with sauce and remaining Monterey Jack and green onions.

    Bake at 350° for 20 minutes.

    Top with tomatoes and lettuce.
