  • 12 ounces macaroni
  • salt and pepper
  • 1 12 ounces butter, plus extra for greasing
  • 1 12 ounces all-purpose flour
  • 3 34 cups milk
  • 2 teaspoons Dijon mustard
  • 6 ounces smoked cheddar cheese, grated
  • 2 ounces mozzarella cheese, grated
  • 3 ounces sharp cheddar cheese, grated
  • 2 ounces fresh breadcrumbs

Directions

    Cook the macaroni according to pack instructions.

    Drain and set aside.

    Melt the butter in a large saucepan.

    Add the flour and cook, stirring for 1 minute Remove the pan from the heat and gradually blend in the milk.

    Bring to a boil, stirring constantly until the mixture thickens.

    Simmer for 5 mins, stirring.

    Stir in the mustard, smoked cheddar, mozzarella, 2 oz of the sharp cheddar and the macaroni.

    Season with salt and pepper.

    Lightly butter a large shallow ovenproof dish and spoon in the macaroni mixture.

    Sprinkle with the breadcrumbs and the remaining cheddar and bake in a preheated oven at 400F for 15-20 mins until golden and bubbling.
