  • 1/2 qt. pasta
  • 1/8 qt. margarine
  • 1/8 qt. flour
  • 3/8 qt. milk
  • 1/8 qt. salt
  • 1/8 qt. pepper
  • 1/8 qt. sugar
  • 1/4 qt. mozzarella
  • monterey jack cheese, grated
  • 1/4 qt. cottage cheese
  • 3/8 qt. cheddar cheese, grated
  • 1/4 qt. bread
  • cracker crumbs
  • 1/8 qt. margarine, melted

Directions

    Cook pasta in a large pot of boiling, salted water.

    Drain and place in a large bowl.

    Melt 50ml margarine over medium heat, and stir in flour.

    Remove from heat and slowly whisk in milk.

    Return to medium heat, and bring to a boil, stirring constantly.

    Add salt, sugar, 250ml cheddar, and 250ml mozzarella to sauce, and stir until melted.

    Mix cottage cheese into sauce and add pasta, stir to combine, and place in a greased casserole dish.

    In a separate bowl, mix together 30ml melted margarine and the bread crumbs with 125ml cheddar cheese, use to top casserole.

    Bake in a 350F oven for 45 to 60 minutes.
