Three-Day Pancakes

  • 2 1/4 c. sifted self-rising flour
  • 2 eggs, separated
  • 2 c. milk
  • 2 tsp. sugar
  • 1/4 c. butter or margarine, melted

Directions

    Beat egg yolks; stir in milk, flour, sugar and melted butter or margarine.

    Beat egg whites until stiff, but not dry.

    Fold into mixture.

    Pour from 1/4 cup into greased and preheated griddle or electric skillet (use 380° setting on skillet).

    Bake until surface is bubbly and edges are dry.

    Turn and bake on other side.

    Makes 16 pancakes.

    Serves 4 to 8 people.
