- 2 1/4 c. sifted self-rising flour
- 2 eggs, separated
- 2 c. milk
- 2 tsp. sugar
- 1/4 c. butter or margarine, melted
Directions

1Beat egg yolks; stir in milk, flour, sugar and melted butter or margarine.

2Beat egg whites until stiff, but not dry.

3Fold into mixture.

4Pour from 1/4 cup into greased and preheated griddle or electric skillet (use 380° setting on skillet).

5Bake until surface is bubbly and edges are dry.

6Turn and bake on other side.

7Makes 16 pancakes.

8Serves 4 to 8 people.
