Three-Grain Pilaf With Dried Apricots And Cherries

Ingredients
- 1/4 c. dried cherries
- 1/4 c. dried apricots, diced
- 1/2 c. apple juice
- 1/2 c. chopped onion
- 1 Tbsp. butter
- 1/3 c. millet
- 1/3 c. quinoa
- 1/3 c. bulgur wheat
- 3 c. vegetable broth
- 1/2 tsp. soy sauce
Directions

1Combine first 2 ingredients and soak in apple juice.

2Saute onion in butter over medium-high heat for about 5 minutes or until lightly browned.

3Add millet and cook 3 to 4 minutes longer.

4Stir in quinoa, bulgur and broth; bring to a boil.

5Drain fruit and add to grains.

6Shake in soy sauce.

7Cover and bake in a 350° oven for 35 minutes.

8Remove from oven and let pilaf sit, covered, for 5 minutes before serving.

9Serves 6 to 8.
