Three-Grain Pilaf With Dried Apricots And Cherries

Ingredients

  • 1/4 c. dried cherries
  • 1/4 c. dried apricots, diced
  • 1/2 c. apple juice
  • 1/2 c. chopped onion
  • 1 Tbsp. butter
  • 1/3 c. millet
  • 1/3 c. quinoa
  • 1/3 c. bulgur wheat
  • 3 c. vegetable broth
  • 1/2 tsp. soy sauce

Directions

    Combine first 2 ingredients and soak in apple juice.

    Saute onion in butter over medium-high heat for about 5 minutes or until lightly browned.

    Add millet and cook 3 to 4 minutes longer.

    Stir in quinoa, bulgur and broth; bring to a boil.

    Drain fruit and add to grains.

    Shake in soy sauce.

    Cover and bake in a 350° oven for 35 minutes.

    Remove from oven and let pilaf sit, covered, for 5 minutes before serving.
