- 2 pkg. dry yeast
- 1 1/2 c. warm water
- 1 c. mashed potatoes (warm), prepared with milk and butter
- 2/3 c. sugar
- 2/3 c. shortening
- 1 1/2 tsp. salt
- 2 eggs, lightly beaten
- 7 c. all-purpose flour
- melted butter
Directions

1In a large bowl, dissolve yeast in warm water. Stir in potatoes, sugar, shortening, salt, eggs and 5 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough. Turn onto a floured surface. Knead until smooth and elastic, about 7 minutes. Place in a large greased bowl, turning once to grease top. Cover and refrigerate for 8 hours or overnight. Punch dough down. Turn onto a lightly floured surface. Divide dough into 3 portions. Make into cloverleaf or pan rolls. Cover and let rise in warm place until doubled. Bake at 400° for 16 minutes. Brush with melted butter.
