- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 teaspoons chopped fresh basil
- 2 teaspoons olive oil
- 2 teaspoons balsamic vinegar*
- 1 garlic clove, pressed
- 1 teaspoon chopped fresh oregano
- *Balsamic vinegar is available at specialty food stores, Italian markets and some supermarkets.
Directions

1Preheat broiler.

2Holding bell pepper at stem, cut bell pepper into 3 flat pieces.

3Discard stem end, core and seeds.

4Repeat with remaining peppers.

5Place pieces skin side up on broiler proof pan.

6Broil bell peppers until skin is charred and blackened, about 8 minutes.

7Transfer bell peppers to plastic bag.

8Twist bag to seal and let stand until peppers are cool.

9(Can be made 1 day ahead; chill.)

10Peel peppers and cut into strips.

11Combine with remaining ingredients in small bowl.

12Let stand 2 hours at room temperature.
