  • 1 Tbsp. butter
  • 2 1/2 c. heavy cream
  • 1/4 c. Dijon mustard
  • 1 1/2 tsp. cornstarch
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/4 lb. each: yams and Idaho potatoes, peeled and thinly sliced
  • 1 tsp. fresh thyme leaves, crumbled

    Preheat oven to 325°.

    With the butter, grease 3-quart shallow baking dish.

    In bowl, mix cream, mustard, cornstarch, salt and pepper.

    Add yams and potatoes; toss.

    Pour into prepared dish. Cover and bake 1 hour; uncovered, bake 30 minutes or until potatoes are tender and golden.

    Let sit 10 minutes.

    Sprinkle with thyme. Makes 12 servings.
