- 1 Tbsp. butter
- 2 1/2 c. heavy cream
- 1/4 c. Dijon mustard
- 1 1/2 tsp. cornstarch
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/4 lb. each: yams and Idaho potatoes, peeled and thinly sliced
- 1 tsp. fresh thyme leaves, crumbled
Directions

1Preheat oven to 325°.

2With the butter, grease 3-quart shallow baking dish.

3In bowl, mix cream, mustard, cornstarch, salt and pepper.

4Add yams and potatoes; toss.

5Pour into prepared dish. Cover and bake 1 hour; uncovered, bake 30 minutes or until potatoes are tender and golden.

6Let sit 10 minutes.

7Sprinkle with thyme. Makes 12 servings.
