  • 1 Tbsp. butter
  • 2 1/2 c. heavy cream
  • 1/4 c. Dijon mustard
  • 1 1/2 tsp. cornstarch
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 lb. each, baking potatoes, sweet potatoes and red potatoes, sliced thinly
  • 1 tsp. fresh thyme, crumbled

Directions

    Preheat oven to 325°.

    Butter a 3-quart shallow baking dish In bowl, combine cream with mustard, cornstarch, salt and pepper. Toss into sliced potatoes.

    Pour into dish and cover.

    Bake 1 hour.

    Uncover and bake 30 more minutes.

    Sprinkle with thyme.
