Ingredients

  • 1 large butternut squash (5 to 6 pounds)
  • 1 tablespoon brown sugar
  • 1 tablespoon 2% milk
  • 1 tablespoon orange juice concentrate
  • 1 tablespoon butter
  • 1 tablespoon maple syrup
  • 1 tablespoon honey
  • 1 teaspoon grated orange zest
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground mace
  • 1/4 teaspoon pepper

    Meanwhile, in a large bowl, combine the remaining ingredients. Remove squash from shell and add to bowl; mash until smooth. Transfer to an 8-in. square baking dish coated with cooking spray. Bake at 350° for 35-45 minutes or until heated through.
