Thyme Roasted Vegetables

- 1 tsp. chopped fresh thyme, or 1/4 tsp. dried
- 1/2 tsp. salt
- 2 tsp. finely chopped garlic
- 2 Tbsp. olive or vegetable oil
- 1 1/2 c. 1 inch pieces fresh asparagus
- 1 1/2 c. thin strips red pepper
- 1 1/2 c. lengthwise quartered baby carrots
- 1 c. sliced 1/2 inch leeks
Directions

1Heat oven to 400 degrees.

2In a large bowl, stir together thyme, salt, garlic, and oil.

3Add vegetables, and mix gently to coat.

4Place vegetables in a 9x13 inch baking pan.

5Cover with foil, and bake, stirring occasionally, for 25 minutes. Uncover; continue baking for 15 to 20 minutes, stirring once until vegetables are tender and just start to brown.
