Ingredients

  • 1 small can (9 oz) crushed pineapple
  • 1/2 c butter or margarine
  • 1 c light brown sugar
  • 1 egg
  • 2 c flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 - 6 oz pkg butterscotch bits
  • 1/2 c chopped walnuts
  • Candied cherries for decoration

Directions

    Strain pineapple, saving syrup.

    Cream butter and brown sugar. Add egg.

    Measure our 3 Tbsp of the pineapple syrup and whip into butter mixture until smooth.

    Add sifted dry ingredients; stir slowly until well bel ended.

    Add crushed pineapple, butterscotch bits and nuts.

    Mix well.

    Spoon onto greased cookie sheet and put a cherry in the middle of each cookie.

    Bake at 375 degrees for 10 to 12 minutes.

    Cookies will be very soft when finished; remove from cookie sheet very carefully.

    Makes 24 cookies.
