  • 6 eggs, separated
  • 3/4 c. sugar
  • 1 lb. Mascarpone cheese
  • 1/2 c. brandy
  • 24 Italian Amaretto biscuits or macaroons
  • 1 1/2 c. strong Espresso coffee
  • 5 oz. shaved semi-sweet chocolate

    Whip the cream until firm and place in refrigerator.

    Beat egg whites until stiff peaks form.

    Gradually beat in sugar and continue beating until stiff.
