- 4 eggs, beaten
- 1/2 tsp. salt
- 1 c. milk
- 2 c. all-purpose flour, sifted
- 2 lb. pork sausage, cut in 3/4-inch pieces
Directions

1Preheat oven to 425°.

2In a large mixing bowl, combine eggs, salt and milk.

3Blend in flour.

4Set aside for 15 minutes.

5In a heavy skillet over medium-high heat, saute sausage.

6Distribute drippings among eight 3-inch pie tins.

7Pour a thin layer (about 1/4-inch) of batter into each tin.

8Bake for 5 minutes or until set.

9Add sausage; top with remaining batter.

10Bake for about 25 minutes or until puffed up and brown; serve at once.
