Potato Cabbage Soup

- 2 c. chopped cabbage
- 3 slices bacon
- 1 Tbsp. reserved bacon fat
- 2 c. finely cubed potatoes
- 1 c. chopped onions
- 1/2 tsp. pepper
- 2 1/2 c. water
- 2 Tbsp. flour
- 1 c. undiluted evaporated milk
- 1 Tbsp. butter
Directions

1Chop cabbage into small pieces.

2Chop bacon into 1-inch pieces and fry until crisp.

3Drain off fat; reserve 1 tablespoon.

4Place reserved fat in saucepan.

5Add vegetables, seasonings and water. Cover and heat to a boil over medium heat.

6Reduce heat; simmer 15 minutes or until vegetables are tender.

7Stir flour into evaporated milk.

8Gradually add evaporated milk-flour mixture to vegetables. Stir constantly.

9Add butter.
-
10Cook until slightly thickened. Makes 5 1/2 cups.
