Toasted Parsnips

- 2 or 3 parsnips (1 lb. each)
- 1/2 Tbsp. butter
- 1/2 tsp. sugar
- pepper
Directions

1Peel the parsnips.

2Cut them into 2-inch lengths across the grain.

3Cut the lengths down into quarters or eighths.

4Boil them in salted water until tender, 20 to 25 minutes.

5Drain them thoroughly and put a folded cloth on top of the saucepan to enable the parsnips to dry off.

6Melt the butter in the frying pan.

7Toss in the cooked parsnips, sprinkled with the sugar.

8Pepper well and brown on all sides.

9Or you could put the buttered parsnips under the broiler and toast.

10Nice with roast beef.
