Ingredients

  • 4 stalks celery
  • 1 large sweet onion
  • 1 sweet pepper, chopped
  • 2 Tbsp. vegetable oil
  • 1 pkg. tofu, dried and diced
  • 1 to 2 cloves garlic
  • 1/2 c. button mushrooms
  • 8 to 10 plum tomatoes
  • 2 Tbsp. vinegar or lemon
  • 1/2 c. tomato sauce
  • dash of chili powder
  • dash of cayenne
  • 2 dashes celery salt
  • dash of red pepper
  • dash of black pepper
  • 1 tsp. oregano
  • 1 tsp. sugar
  • 1 bay leaf

Directions

    Saute sliced celery with leaves on, chopped onion and chopped sweet pepper for 5 minutes in vegetable oil.

    Add tofu, minced garlic and mushrooms and cook 2 minutes.

    Add all other ingredients and bring to a boil.

    Simmer until done, about 30 minutes.
