Ingredients
- 3 whole eggs
- 8 oz. tofu, rinsed and drained
- 2 green onions (include greens), chopped
- 1 1/2 Tbsp. Parmesan cheese
- 1 Tbsp. lite soy sauce
- 1/2 c. celery, minced
- 2 Tbsp. fresh parsley, chopped
- 3/4 c. bean sprouts, rinsed and drained
- 1 Tbsp. olive oil
Directions

1Beat eggs in a bowl.

2Mash the tofu into small pieces.

3To the eggs add tofu, sprouts, celery, cheese, soy sauce, green onions and parsley.

4Mix thoroughly.

5Heat olive oil in skillet until hot.

6Drop batter by tablespoon into the hot oil.

7When one side is brown, turn and brown the other side.

8Serves 4.
