Ingredients
- 1 large onion, thinly sliced
- 1 Tbsp. olive oil
- 2 c. chicken broth
- 6 medium tomatoes, peeled and quartered
- 1 (6 oz.) can tomato paste
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. snipped fresh basil or 2 tsp. dried crushed basil
Directions

1Cook onion in oil until tender, but not browned.

2Stir in chicken broth, tomatoes, tomato paste, sugar, salt and pepper. Heat to boil; cover, reduce heat and simmer for 20 minutes.

3Add basil and simmer for 5 minutes longer.

4Cool slightly.

5Put small amounts of tomato soup in a blender or food processor.

6Cover; blend until smooth.

7Serve warm.
