- 1 block soft tofu, drained
- 1 (6 oz.) box lemon jello
- 2 c. boiling water
- 2 Tbsp. lemon juice
- 1 to 2 Tbsp. lemon extract
- 2 (8 oz.) containers Cool Whip
- 3 graham or butter pie shells
Directions

1Drain tofu; mash and mix in a small bowl and set aside.

2In a larger bowl, mix together jello, lemon juice and lemon extract. Add tofu and blend well.

3Chill until slightly gelled and fold in 8 ounces Cool Whip.

4Pour into pie shells and chill well.

5Using the other 8 ounces of Cool Whip, top the tofu pies.
