Tofu & Sweet Pepper Scramble

  • 1 Tbsp. canola oil
  • 1 medium red onion, chopped
  • 1 medium green pepper, chopped
  • 2 medium red peppers, chopped
  • 16 oz. firm or extra firm lite silken tofu
  • 1-1/2 cups TACO BELL HOME ORIGINALS Salsa
  • 8 slices
  • 8 slices whole wheat bread, toasted
  • 8 tsp. trans fat free canola-based soft margarine
  • 32 fl oz (4 cups) orange juice

Directions

    Heat oil over medium heat in nonstick skillet.

    Add onion and pepper; saute 5 min.

    Add tofu and salsa, chopping the tofu into the vegetables as you stir.

    Break up soy cheese into the pan, mixing well to melt cheese evenly throughout mixture.

    Divide into 4 equal servings.

    Spread 1 tsp.

    margarine on each slice of toast; serve each person 2 slices.

    Serve each person an 8 fl oz glass of orange juice with the meal.
