Tomatillo Salsa

Ingredients

  • 1 lb tomatillos (8 or 9), husk removed, rinsed and dried
  • 1 onion (8 ounces), cut into eighths
  • 1 tbsp olive oil
  • 6 clove garlic, peeled and each clove cut in half lengthwise
  • 1 bunch cilantro, cleaned (2 ounces of tops), chopped
  • 3 jalapenos, stems removed and each cut in half lengthwise
  • 1 tbsp lime reduction (zest of 1 lime and 1/4 cup lime juice reduced to 1 tablespoon liquid)
  • 1 salt to taste
  • 1 pepper to taste

Directions

    Place a heavy bottomed saute' pan over high heat.

    In a bowl, toss the tomatillos and onion together.

    Season with salt and pepper and add oil to pan.

    When pan is really hot, sear mixture, turning and blackening for 5 minutes.

    Add garlic and jalapenos and cook 3 minutes.

    Remove from pan to a food processor or blender and let cool.

    Add cilantro and lime and pulse until chunky and the size of peas.

    *This recipe makes about 2 1/2 cups.
