Ingredients

  • 1 (9 oz.) pkg. fresh linguine
  • 1 bunch fresh broccoli, cut into 3/4-inch flowerets
  • 4 ripe plum tomatoes, seeded and chopped
  • 3 Tbsp. red wine vinegar
  • 3 Tbsp. olive oil
  • 3 scallions, chopped
  • 1/4 c. chopped fresh basil
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • grated Parmesan cheese

Directions

    In a large pot of boiling salted water, cook linguine and broccoli until just tender, 2 to 3 minutes; drain well.

    Transfer to a large bowl.

    Add all remaining ingredients except cheese and toss with linguine and broccoli.

    Serve warm, at room temperature, or chilled.

    Pass a bowl of grated Parmesan cheese on the side.
