Ingredients

  • 2 Tbsp. olive oil
  • 1 medium onion, minced
  • 1 c. whole tomatoes, mashed without liquid
  • 1 c. water
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1 tsp. fresh basil, chopped fine or 1/2 tsp. dried
  • 1 c. rice
  • 4 Tbsp. Parmesan cheese

Directions

    Heat olive oil and saute onion until translucent.

    Add tomatoes and water.

    Bring to a boil and add salt, pepper, garlic powder and basil.

    Bring to a second boil and add rice and stir.

    Reduce to low heat and cover.

    Cook until liquid is absorbed, 15 to 20 minutes.

    Stir in Parmesan cheese before serving.
