- 1 large can tomatoes
- 3 eggs
- 1 onion, chopped
- 2 stalks celery, chopped
- 1 large bell pepper, chopped
- salt and pepper to taste
Directions

1Saute onions, bell pepper and celery until onions become transparent.

2Add tomatoes and cook gently until mixture dries a little.

3Drop eggs into mixture and stir slightly.

4Add salt and pepper.

5Cover for 10 minutes.
