Tomato-Basil Couscous

  • 1 cup vegetable broth
  • 1 cup sliced green onions
  • 2 tablespoons oil snipped, pack dried tomatoes
  • 1 dash pepper
  • 1 teaspoon dried basil crushed
  • 1 cup couscous quick-cooking

Directions

    In a small saucepan, combine broth, green onion, tomatoes, pepper and basil. Bring to boil; remove from heat. Stir in couscous. Let stand, covered, for 5 minutes. Before serving, fluff with a fork. Spoon onto plates or mold into mounds.

    To mold, lightly spray nonstick cooking spray onto bottoms of four, 6-ounce custard cups. Spoon couscous mix into prepared cups; press firmly into cups. Unmold onto plates.
